I have collected the data and would like to exclude some of the responses submitted by my colleague during the testing phase. Is it possible to apply a filter to skip those responses without deleting them?

Yes, we can bulk edit the responses to update the custom variable, except for the test responses. We need to update the custom variable with the same value and then apply filters based on the value of the custom variable.
